This matcha is shade-grown to encourage enhanced chlorophyll production. Once harvested and dried, the leaves are stone-ground into a fine powder about five microns small, smaller than talcum or baby powder. Matcha is revered for its health qualities because, while most teas are steeped and separated, matcha is wholly consumed.
