Palouse

Palouse - A Tribute to the Rolling Hills & the Hands that Tend Them

Out where the gnomes wander beneath the golden sun, the land rolls in waves of wheat as far as their lantern-light can see. Inspired by the breathtaking Palouse, this organic, single-origin celebrates the beauty of those timeless hills - and the farmers who bring them to life.

Palouse is a smooth, balanced medium roast. Imagine a sunrise spilling over fields of gold. It's a cup that grounds you, steadies you, and reminds you of the quiet magic found in simple, honest work.

  • Special Note:  10% of each sale from the Palouse Roast will benefit the National Young Farmers Coalition. Young Farmers seek to shift power and change policy to equitable resource our new generation of working farmers. The National Young Farmers Coalition envisions a just future where farming is free from racial violence, accessible to communities, oriented towards environmental well-being, and concerned with health over profit.

Sip the spirit of the rolling hills and "amber waves of grain". Raise your mug to the farmers. Palouse awaits.

ROAST LEVEL:

FLAVOR WHEEL:

ORIGIN:

Colombia Bochica is sourced from smallholder farmers in Colombia’s renowned coffee-growing regions, including Huila, Cauca, Nariño, and Tolima. These producers belong to cooperatives and associations that prioritize traceability, quality, and sustainability. Coffee is processed using the traditional fully washed method: ripe cherry is selectively handpicked and pulped on the farm, then fermented in tanks for 26 to 36 hours. After fermentation, the parchment is washed in clean water and dried on parabolic beds for up to 20 days. The result is a clean, balanced cup with round body, bright acidity, chocolate sweetness, and fruit-forward notes. Close collaboration throughout the supply chain ensures consistency across harvests.
